Ingredients

  • Russet potatoes - 500 grams
  • Olive oil - 2 tablespoons

  • Black pepper - 1/2 teaspoon
  • Button mushrooms - 200 grams, sliced
  • Garlic - 2 cloves, minced
  • Vegetable broth - 250 ml
  • Soy sauce - 1 tablespoon
  • Cornstarch - 1 tablespoon
  • Water - 2 tablespoons
  • Nutritional yeast - 2 tablespoons
  • Vegan cheese curds - 100 grams

Steps

  1. Preheat the oven to 220°C (425°F).
  2. Wash and cut the russet potatoes into fries, then toss with olive oil, salt, and black pepper.
  3. Spread the fries out on a baking sheet in a single layer and bake for 25-30 minutes, flipping halfway through, until crispy and golden.
  4. While the fries are baking, prepare the gravy by heating a skillet over medium heat and adding sliced mushrooms.
  5. Sauté the mushrooms for 5-7 minutes until they start to brown, then add minced garlic and cook for another minute.
  6. In a small bowl, mix cornstarch with water to create a slurry and add it to the skillet.
  7. Pour in the vegetable broth and soy sauce, stirring continuously until the mixture thickens, about 3-5 minutes.
  8. Stir in nutritional yeast, then remove from heat and season with salt and pepper to taste.
  9. Once the fries are done, remove them from the oven and place them on a serving plate.
  10. Pour the mushroom gravy over the fries and sprinkle vegan cheese curds on top.
