- Button mushrooms - 200 grams, sliced
- Garlic - 2 cloves, minced
- Vegetable broth - 250 ml
- Soy sauce - 1 tablespoon
- Cornstarch - 1 tablespoon
- Water - 2 tablespoons
- Nutritional yeast - 2 tablespoons
- Vegan cheese curds - 100 grams
Steps
- Preheat the oven to 220°C (425°F).
- Wash and cut the russet potatoes into fries, then toss with olive oil, salt, and black pepper.
- Spread the fries out on a baking sheet in a single layer and bake for 25-30 minutes, flipping halfway through, until crispy and golden.
- While the fries are baking, prepare the gravy by heating a skillet over medium heat and adding sliced mushrooms.
- Sauté the mushrooms for 5-7 minutes until they start to brown, then add minced garlic and cook for another minute.
- In a small bowl, mix cornstarch with water to create a slurry and add it to the skillet.
- Pour in the vegetable broth and soy sauce, stirring continuously until the mixture thickens, about 3-5 minutes.
- Stir in nutritional yeast, then remove from heat and season with salt and pepper to taste.
- Once the fries are done, remove them from the oven and place them on a serving plate.
- Pour the mushroom gravy over the fries and sprinkle vegan cheese curds on top.
