Ingredients

  • All-purpose flour - 1 cup
  • Water - 1/4 cup
  • Firm tofu - 150 grams, crumbled
  • Shiitake mushrooms - 100 grams, finely chopped
  • Carrot - 1 medium, grated
  • Green onions - 2, finely chopped
  • Garlic - 2 cloves, minced
  • Ginger - 1 teaspoon, grated
  • Soy sauce - 2 tablespoons
  • Sesame oil - 1 tablespoon
  • Salt - 1/2 teaspoon
  • Pepper - 1/4 teaspoon
  • Vegetable oil - 2 tablespoons (for frying)

Steps

  1. In a bowl, combine the all-purpose flour and water to form a dough. Knead it for about 5 minutes until smooth, then cover and let it rest for 30 minutes.
  2. In a skillet over medium heat, add the sesame oil and sauté the garlic and ginger for 1 minute until fragrant.
  3. Add the chopped shiitake mushrooms, grated carrot, and crumbled tofu. Cook for about 5-7 minutes, stirring occasionally until the mushrooms are tender.
  4. Stir in the soy sauce, chopped green onions, salt, and pepper. Remove from heat and let the filling cool slightly.
  5. Divide the dough into 12 equal pieces and roll each piece into a thin circle, about 3 inches in diameter.
  6. Place 1 tablespoon of the filling in the center of each dough circle. Fold the dough over to create a half-moon shape and pinch the edges to seal.
  7. In a large skillet, heat the vegetable oil over medium-high heat. Place the potstickers in the skillet and fry for 2-3 minutes until the bottoms are golden brown.
  8. Add 1/4 cup of water to the skillet and cover immediately. Steam the potstickers for about 5-7 minutes until the water has evaporated.
  9. Remove the lid and cook for an additional 1-2 minutes to crisp the bottoms. Serve hot with soy sauce or your favorite dipping sauce.
