Ingredients

  • Potatoes - 400 grams (about 3 medium potatoes)
  • Olive oil - 2 tablespoons
  • Ground cumin - 1 teaspoon
  • Paprika - 1 teaspoon
  • Garlic powder - 1/2 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Corn tortillas - 4 small
  • Avocado - 1 medium, sliced
  • Fresh cilantro - 1/4 cup, chopped
  • Lime - 1, cut into wedges
  • Salsa - 100 grams (optional)

Steps

  1. Preheat the oven to 200°C (400°F).
  2. Peel and dice the potatoes into small cubes.
  3. In a bowl, toss the diced potatoes with olive oil, ground cumin, paprika, garlic powder, salt, and black pepper until evenly coated.
  4. Spread the seasoned potatoes on a baking sheet in a single layer.
  5. Roast the potatoes in the preheated oven for 20-25 minutes, or until they are golden brown and crispy, stirring halfway through.
  6. While the potatoes are roasting, warm the corn tortillas in a dry skillet over medium heat for about 30 seconds on each side.
  7. Once the potatoes are done, assemble the tacos by placing a generous spoonful of roasted potatoes on each tortilla.
  8. Top with sliced avocado and chopped cilantro, and serve with lime wedges and salsa on the side.
