Ingredients

  • Potatoes - 400 grams
  • All-purpose flour - 50 grams
  • Nutritional yeast - 2 tablespoons
  • Garlic powder - 1 teaspoon
  • Onion powder - 1 teaspoon
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Chopped fresh parsley - 2 tablespoons
  • Olive oil - for frying

Steps

  1. Peel and chop the potatoes into small pieces. Boil them in salted water for about 15 minutes or until fork-tender.
  2. Drain the potatoes and return them to the pot. Mash the potatoes until smooth.
  3. Add the flour, nutritional yeast, garlic powder, onion powder, salt, black pepper, and chopped parsley to the mashed potatoes. Mix until well combined.
  4. Shape the potato mixture into small oval or round croquettes, about 2 inches long.
  5. Heat olive oil in a frying pan over medium heat. Once hot, carefully place the croquettes in the pan, making sure not to overcrowd.
  6. Fry the croquettes for about 3-4 minutes on each side or until golden brown and crispy.
  7. Remove the croquettes from the pan and place them on a paper towel to absorb excess oil. Serve hot.
