- Potatoes - 400 grams
- All-purpose flour - 50 grams
- Nutritional yeast - 2 tablespoons
- Garlic powder - 1 teaspoon
- Onion powder - 1 teaspoon
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Chopped fresh parsley - 2 tablespoons
- Olive oil - for frying
Steps
- Peel and chop the potatoes into small pieces. Boil them in salted water for about 15 minutes or until fork-tender.
- Drain the potatoes and return them to the pot. Mash the potatoes until smooth.
- Add the flour, nutritional yeast, garlic powder, onion powder, salt, black pepper, and chopped parsley to the mashed potatoes. Mix until well combined.
- Shape the potato mixture into small oval or round croquettes, about 2 inches long.
- Heat olive oil in a frying pan over medium heat. Once hot, carefully place the croquettes in the pan, making sure not to overcrowd.
- Fry the croquettes for about 3-4 minutes on each side or until golden brown and crispy.
- Remove the croquettes from the pan and place them on a paper towel to absorb excess oil. Serve hot.
