Ingredients

  • Whole wheat pasta - 150 grams
  • Olive oil - 1 tablespoon
  • Red onion - 1 small, chopped
  • Bell pepper - 1 medium, diced
  • Mushrooms - 100 grams, sliced
  • Zucchini - 1 small, diced
  • Garlic - 2 cloves, minced
  • Crushed tomatoes - 400 grams (1 can)
  • Tomato paste - 2 tablespoons
  • Italian seasoning - 1 teaspoon
  • Nutritional yeast - 2 tablespoons
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Spinach - 50 grams, fresh
  • Vegan cheese - 100 grams, shredded (optional)
  • Fresh basil - for garnish

Steps

  1. Preheat the oven to 180°C (350°F).
  2. Cook the whole wheat pasta according to package instructions until al dente. Drain and set aside.
  3. In a large skillet, heat the olive oil over medium heat. Add the chopped red onion and sauté for 2-3 minutes until translucent.
  4. Add the diced bell pepper, sliced mushrooms, and zucchini to the skillet. Cook for another 5-7 minutes until the vegetables are softened.
  5. Stir in the minced garlic and cook for 1 minute until fragrant.
  6. Add the crushed tomatoes, tomato paste, Italian seasoning, nutritional yeast, salt, and black pepper. Stir well and let simmer for 5 minutes.
  7. Fold in the fresh spinach and cooked pasta until well combined.
  8. Transfer the mixture to a greased baking dish and top with vegan cheese if using.
  9. Bake in the preheated oven for 20 minutes until heated through and slightly golden on top.
  10. Remove from the oven, garnish with fresh basil, and let it cool for a few minutes before serving.
