- Whole wheat pasta - 150 grams
- Olive oil - 1 tablespoon
- Red onion - 1 small, chopped
- Bell pepper - 1 medium, diced
- Mushrooms - 100 grams, sliced
- Zucchini - 1 small, diced
- Garlic - 2 cloves, minced
- Crushed tomatoes - 400 grams (1 can)
- Tomato paste - 2 tablespoons
- Italian seasoning - 1 teaspoon
- Nutritional yeast - 2 tablespoons
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Spinach - 50 grams, fresh
- Vegan cheese - 100 grams, shredded (optional)
- Fresh basil - for garnish
Steps
- Preheat the oven to 180°C (350°F).
- Cook the whole wheat pasta according to package instructions until al dente. Drain and set aside.
- In a large skillet, heat the olive oil over medium heat. Add the chopped red onion and sauté for 2-3 minutes until translucent.
- Add the diced bell pepper, sliced mushrooms, and zucchini to the skillet. Cook for another 5-7 minutes until the vegetables are softened.
- Stir in the minced garlic and cook for 1 minute until fragrant.
- Add the crushed tomatoes, tomato paste, Italian seasoning, nutritional yeast, salt, and black pepper. Stir well and let simmer for 5 minutes.
- Fold in the fresh spinach and cooked pasta until well combined.
- Transfer the mixture to a greased baking dish and top with vegan cheese if using.
- Bake in the preheated oven for 20 minutes until heated through and slightly golden on top.
- Remove from the oven, garnish with fresh basil, and let it cool for a few minutes before serving.
