Ingredients

  • Whole grain pasta - 200 grams
  • Kale - 150 grams, chopped
  • Garlic - 3 cloves, minced
  • Olive oil - 2 tablespoons
  • Lemon - 1, juiced and zested
  • Nutritional yeast - 2 tablespoons
  • Red pepper flakes - 1/2 teaspoon
  • Salt - to taste
  • Black pepper - to taste
  • Cherry tomatoes - 100 grams, halved

Steps

  1. Bring a large pot of salted water to a boil. Add the whole grain pasta and cook according to package instructions until al dente, usually about 8-10 minutes.
  2. While the pasta is cooking, heat the olive oil in a large skillet over medium heat. Add the minced garlic and red pepper flakes, sautéing for about 1 minute until fragrant.
  3. Add the chopped kale to the skillet, stirring well to coat with the oil. Cook for about 5 minutes, until the kale is wilted and tender.
  4. Once the pasta is cooked, reserve 1/2 cup of the pasta water and then drain the pasta. Add the cooked pasta to the skillet with the sautéed kale.
  5. Pour in the lemon juice and zest, and sprinkle the nutritional yeast over the top. Toss everything together, adding reserved pasta water as needed to create a light sauce.
  6. Add the halved cherry tomatoes, and season with salt and black pepper to taste. Toss again until everything is well combined.
  7. Serve immediately, garnished with additional nutritional yeast or a drizzle of olive oil if desired.
