- Whole grain pasta - 200 grams
- Kale - 150 grams, chopped
- Garlic - 3 cloves, minced
- Olive oil - 2 tablespoons
- Lemon - 1, juiced and zested
- Nutritional yeast - 2 tablespoons
- Red pepper flakes - 1/2 teaspoon
- Salt - to taste
- Black pepper - to taste
- Cherry tomatoes - 100 grams, halved
Steps
- Bring a large pot of salted water to a boil. Add the whole grain pasta and cook according to package instructions until al dente, usually about 8-10 minutes.
- While the pasta is cooking, heat the olive oil in a large skillet over medium heat. Add the minced garlic and red pepper flakes, sautéing for about 1 minute until fragrant.
- Add the chopped kale to the skillet, stirring well to coat with the oil. Cook for about 5 minutes, until the kale is wilted and tender.
- Once the pasta is cooked, reserve 1/2 cup of the pasta water and then drain the pasta. Add the cooked pasta to the skillet with the sautéed kale.
- Pour in the lemon juice and zest, and sprinkle the nutritional yeast over the top. Toss everything together, adding reserved pasta water as needed to create a light sauce.
- Add the halved cherry tomatoes, and season with salt and black pepper to taste. Toss again until everything is well combined.
- Serve immediately, garnished with additional nutritional yeast or a drizzle of olive oil if desired.
