- Red bell pepper - 1, diced
- Green bell pepper - 1, diced
- Carrot - 1 medium, diced
- Zucchini - 1 medium, diced
- Tomato - 1 medium, diced
- Vegetable broth - 500 ml
- Short-grain rice - 150 grams
- Saffron threads - a pinch
- Smoked paprika - 1 teaspoon
- Frozen peas - 100 grams
- Chickpeas - 1 can (400 grams), drained and rinsed
- Salt - to taste
- Black pepper - to taste
- Lemon - 1, cut into wedges for serving
- Fresh parsley - for garnish
Steps
- In a large skillet or paella pan, heat the olive oil over medium heat.
- Add the diced onion and garlic; sauté for about 3-4 minutes until softened.
- Stir in the diced red and green bell peppers, carrot, and zucchini; cook for another 5 minutes.
- Add the diced tomato, and cook for an additional 2 minutes until it starts to break down.
- Pour in the vegetable broth and bring to a simmer.
- Stir in the rice, saffron, smoked paprika, salt, and pepper; mix well.
- Reduce the heat to low, cover the skillet, and let it cook for 15-20 minutes until the rice is tender and has absorbed most of the liquid.
- Add the frozen peas and chickpeas, stirring gently to combine, then cover again and cook for another 5 minutes.
- Remove from heat and let it sit for 5 minutes before serving.
- Garnish with fresh parsley and serve with lemon wedges.
