  • Onion - 1 medium, diced
  • Garlic - 3 cloves, minced
  • Red bell pepper - 1, diced
  • Green bell pepper - 1, diced
  • Carrot - 1 medium, diced
  • Zucchini - 1 medium, diced
  • Tomato - 1 medium, diced
  • Vegetable broth - 500 ml
  • Short-grain rice - 150 grams
  • Saffron threads - a pinch
  • Smoked paprika - 1 teaspoon
  • Frozen peas - 100 grams
  • Chickpeas - 1 can (400 grams), drained and rinsed
  • Salt - to taste
  • Black pepper - to taste
  • Lemon - 1, cut into wedges for serving
  • Fresh parsley - for garnish

Steps

  1. In a large skillet or paella pan, heat the olive oil over medium heat.
  2. Add the diced onion and garlic; sauté for about 3-4 minutes until softened.
  3. Stir in the diced red and green bell peppers, carrot, and zucchini; cook for another 5 minutes.
  4. Add the diced tomato, and cook for an additional 2 minutes until it starts to break down.
  5. Pour in the vegetable broth and bring to a simmer.
  6. Stir in the rice, saffron, smoked paprika, salt, and pepper; mix well.
  7. Reduce the heat to low, cover the skillet, and let it cook for 15-20 minutes until the rice is tender and has absorbed most of the liquid.
  8. Add the frozen peas and chickpeas, stirring gently to combine, then cover again and cook for another 5 minutes.
  9. Remove from heat and let it sit for 5 minutes before serving.
  10. Garnish with fresh parsley and serve with lemon wedges.
