- Oyster mushrooms - 200 grams
- All-purpose flour - 1/2 cup
- Cornstarch - 1/4 cup
- Plant-based milk - 1/2 cup
- Panko breadcrumbs - 1 cup
- Olive oil - 2 tablespoons
- Lemon juice - 1 tablespoon
- Smoked paprika - 1 teaspoon
- Garlic powder - 1 teaspoon
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Baguette - 2 pieces
- Lettuce - 1 cup, shredded
- Tomato - 1 medium, sliced
- Pickles - 1/4 cup, sliced
- Vegan mayo - 1/4 cup
- Dijon mustard - 1 tablespoon
- Hot sauce - to taste
Steps
- Preheat the oven to 200°C (400°F).
- In a bowl, mix the flour, cornstarch, smoked paprika, garlic powder, salt, and black pepper.
- Dip each oyster mushroom in the plant-based milk, then dredge in the flour mixture, coating evenly.
- Place the coated mushrooms in panko breadcrumbs, pressing gently to adhere.
- Arrange the breaded mushrooms on a baking sheet lined with parchment paper and drizzle with olive oil.
- Bake for 20 minutes, flipping halfway through, until golden and crispy.
- While the mushrooms are baking, prepare the remoulade by mixing vegan mayo, Dijon mustard, lemon juice, and hot sauce in a small bowl.
- Slice the baguettes in half and lightly toast them if desired.
- Assemble the Po' Boys by spreading remoulade on both sides of the baguettes.
- Layer in the shredded lettuce, tomato slices, pickles, and the crispy oyster mushrooms.
