Ingredients

  • Oyster mushrooms - 200 grams
  • All-purpose flour - 1/2 cup
  • Cornstarch - 1/4 cup
  • Plant-based milk - 1/2 cup
  • Panko breadcrumbs - 1 cup
  • Olive oil - 2 tablespoons
  • Lemon juice - 1 tablespoon
  • Smoked paprika - 1 teaspoon
  • Garlic powder - 1 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Baguette - 2 pieces
  • Lettuce - 1 cup, shredded
  • Tomato - 1 medium, sliced
  • Pickles - 1/4 cup, sliced
  • Vegan mayo - 1/4 cup
  • Dijon mustard - 1 tablespoon
  • Hot sauce - to taste

Steps

  1. Preheat the oven to 200°C (400°F).
  2. In a bowl, mix the flour, cornstarch, smoked paprika, garlic powder, salt, and black pepper.
  3. Dip each oyster mushroom in the plant-based milk, then dredge in the flour mixture, coating evenly.
  4. Place the coated mushrooms in panko breadcrumbs, pressing gently to adhere.
  5. Arrange the breaded mushrooms on a baking sheet lined with parchment paper and drizzle with olive oil.
  6. Bake for 20 minutes, flipping halfway through, until golden and crispy.
  7. While the mushrooms are baking, prepare the remoulade by mixing vegan mayo, Dijon mustard, lemon juice, and hot sauce in a small bowl.
  8. Slice the baguettes in half and lightly toast them if desired.
  9. Assemble the Po' Boys by spreading remoulade on both sides of the baguettes.
  10. Layer in the shredded lettuce, tomato slices, pickles, and the crispy oyster mushrooms.
