Ingredients

  • Oyster mushrooms - 200 grams
  • All-purpose flour - 1/2 cup (60 grams)
  • Cornstarch - 2 tablespoons (15 grams)
  • Plant-based milk - 1/2 cup (120 ml)
  • Old Bay seasoning - 1 teaspoon
  • Garlic powder - 1/2 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Panko breadcrumbs - 1 cup (100 grams)
  • Vegetable oil - 1/2 cup (120 ml) for frying
  • French baguette - 2 small (about 6 inches each)
  • Lettuce - 1 cup, shredded
  • Tomato - 1 medium, sliced
  • Dill pickles - 1/2 cup, sliced
  • Vegan mayonnaise - 1/4 cup (60 grams)
  • Dijon mustard - 1 tablespoon
  • Lemon juice - 1 tablespoon
  • Hot sauce - to taste

Steps

  1. Clean the oyster mushrooms and pat them dry with a paper towel.
  2. In a mixing bowl, combine the flour, cornstarch, Old Bay seasoning, garlic powder, salt, and black pepper.
  3. Pour the plant-based milk into another bowl.
  4. Place the panko breadcrumbs in a third bowl.
  5. Dip each oyster mushroom first into the flour mixture, then the plant-based milk, and finally coat with panko breadcrumbs. Ensure they are well-coated.
  6. In a frying pan, heat the vegetable oil over medium heat until shimmering.
  7. Fry the coated mushrooms in batches for about 3-4 minutes on each side or until golden brown and crispy. Remove and place on paper towels to drain excess oil.
  8. While the mushrooms are frying, prepare the remoulade by mixing vegan mayo, Dijon mustard, lemon juice, and hot sauce in a small bowl.
  9. Slice the baguettes in half and lightly toast them if desired.
  10. Assemble the po' boys by spreading the remoulade on the inside of the baguette, then layer with lettuce, fried oyster mushrooms, tomato slices, and dill pickles.
