Ingredients

  • Raw Cashews - 100 grams (soaked for 4 hours)
  • Nutritional Yeast - 2 tablespoons
  • Lemon Juice - 1 tablespoon

  • Onion Powder - 1 teaspoon
  • Salt - 1/2 teaspoon
  • Water - 100 ml (more if needed)
  • Cherry Tomatoes - 100 grams (halved)
  • Red Onion - 50 grams (finely chopped)
  • Fresh Cilantro - 2 tablespoons (chopped)
  • Jalapeños - 30 grams (sliced)
  • Avocado - 1 medium (for crema)
  • Lime Juice - 1 tablespoon (for crema)
  • Salt - to taste (for crema)

Steps

  1. Soak the raw cashews in water for at least 4 hours, then drain and rinse them.
  2. In a blender, combine the soaked cashews, nutritional yeast, lemon juice, garlic powder, onion powder, salt, and 100 ml of water. Blend until smooth and creamy, adding more water if necessary to reach a pourable consistency.
  3. Prepare the avocado crema by blending the avocado, lime juice, and a pinch of salt in a separate bowl until smooth. Adjust seasoning to taste.
  4. Preheat your oven to 180°C (350°F). Spread the tortilla chips on a baking sheet.
  5. Drizzle the cashew cheese sauce evenly over the tortilla chips, ensuring they are well-covered.
  6. Top with halved cherry tomatoes, chopped red onion, cilantro, and sliced jalapeños.
  7. Bake in the preheated oven for about 10 minutes, or until the chips are slightly golden and the cheese is warmed through.
