Ingredients

  • Portobello mushrooms - 2 large
  • Olive oil - 2 tablespoons
  • Soy sauce - 1 tablespoon
  • Garlic powder - 1 teaspoon
  • Smoked paprika - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Whole wheat burger buns - 2
  • Avocado - 1, sliced
  • Lettuce leaves - 2
  • Tomato - 1, sliced
  • Red onion - 1/2, thinly sliced
  • Vegan mayonnaise - 2 tablespoons

Steps

  1. Preheat your grill or stovetop grill pan over medium heat.
  2. In a small bowl, mix together olive oil, soy sauce, garlic powder, smoked paprika, and black pepper.
  3. Brush the marinade over both sides of the portobello mushrooms and let them sit for about 10 minutes.
  4. Place the mushrooms on the grill and cook for 5-7 minutes on each side, until they are tender and have grill marks.
  5. While the mushrooms are grilling, toast the whole wheat burger buns on the grill for about 1-2 minutes until golden.
