  • Cucumber - 1 medium, diced
  • Cherry tomatoes - 150 grams, halved
  • Red onion - 50 grams, thinly sliced
  • Kalamata olives - 50 grams, pitted and sliced
  • Fresh parsley - 30 grams, chopped
  • Tahini - 30 grams (2 tablespoons)
  • Lemon juice - 15 ml (1 tablespoon)
  • Garlic powder - 1 gram (1/4 teaspoon)
  • Paprika - 1 gram (1/4 teaspoon)
  • Salt - to taste
  • Black pepper - to taste

Steps

  1. In a bowl, combine the chickpeas, diced cucumber, halved cherry tomatoes, sliced red onion, sliced olives, and chopped parsley.
  2. In a separate small bowl, whisk together the tahini, lemon juice, garlic powder, paprika, salt, and black pepper until smooth. If the mixture is too thick, add a small amount of water until desired consistency is reached.
  3. Spread a generous amount of the tahini dressing onto each tortilla.
  4. Divide the chickpea and vegetable mixture evenly between the two tortillas.
