Ingredients

  • Green lentils - 100 grams
  • Rolled oats - 50 grams
  • Carrot - 1 medium, grated
  • Celery - 1 stalk, finely chopped
  • Onion - 1 small, finely chopped
  • Garlic - 2 cloves, minced
  • Soy sauce - 2 tablespoons
  • Tomato paste - 2 tablespoons
  • Ground flaxseed - 1 tablespoon
  • Water - 3 tablespoons (for flaxseed)
  • Dried thyme - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Salt - 1/2 teaspoon
  • Olive oil - 1 tablespoon
  • Ketchup - 3 tablespoons (for glaze)
  • Maple syrup - 1 tablespoon (for glaze)
  • Balsamic vinegar - 1 tablespoon (for glaze)

Steps

  1. Preheat your oven to 180°C (350°F).
  2. In a saucepan, cook the green lentils in 300ml of water for about 25 minutes or until tender. Drain and set aside.
  3. In a small bowl, mix the ground flaxseed with 3 tablespoons of water and let it sit for about 5 minutes to thicken.
  4. In a skillet, heat olive oil over medium heat. Add the chopped onion, celery, and grated carrot, and sauté until softened, about 5-7 minutes. Add minced garlic and cook for an additional minute.
  5. In a large bowl, combine the cooked lentils, sautéed vegetables, rolled oats, soy sauce, tomato paste, dried thyme, black pepper, and salt. Add the flaxseed mixture and mix until well combined.
  6. Transfer the mixture to a loaf pan, pressing it down firmly to shape it.
  7. In a separate bowl, mix together the ketchup, maple syrup, and balsamic vinegar to create the glaze. Spread the glaze evenly over the top of the meatloaf.
  8. Bake in the preheated oven for 35-40 minutes, or until firm and slightly crispy on the edges.
  9. Let the meatloaf cool for a few minutes before slicing and serving.
