- Pizza dough - 200 grams
- Olive oil - 1 tablespoon
- Tomato sauce - 150 grams
- Vegan mozzarella cheese - 100 grams
- Oregano - 1 teaspoon
- Basil - 1 teaspoon
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Chickpeas - 100 grams (cooked)
- Mushrooms - 50 grams (finely chopped)
- Carrot - 1 small (grated)
- Onion - 1/2 small (finely chopped)
- Garlic - 1 clove (minced)
- Flaxseed meal - 1 tablespoon
- Water - 2 tablespoons
- Nutritional yeast - 2 tablespoons
Steps
- Preheat your oven to 220°C (428°F).
- In a bowl, mix the flaxseed meal with water and let it sit for 5 minutes to thicken.
- In a separate bowl, combine cooked chickpeas, finely chopped mushrooms, grated carrot, chopped onion, minced garlic, nutritional yeast, oregano, salt, and black pepper. Add the flaxseed mixture and mash everything together until well combined.
- Form the mixture into small meatballs, about 2.5 cm in diameter.
- Heat olive oil in a skillet over medium heat. Cook the meatballs for about 5-7 minutes, turning occasionally until they are golden brown on all sides.
- Roll out the pizza dough on a floured surface to your desired thickness and transfer it to a baking sheet or pizza stone.
- Spread the tomato sauce evenly over the pizza dough, leaving a small border for the crust.
- Sprinkle the vegan mozzarella cheese over the sauce, and then evenly place the cooked meatballs on top.
- Bake in the preheated oven for 15-20 minutes, or until the crust is golden and the cheese is melted.
- Remove from the oven, sprinkle with fresh basil, and let it cool for a few minutes before slicing.
