Ingredients

  • Green or brown lentils - 150 grams
  • Water - 500 ml
  • Olive oil - 1 tablespoon
  • Onion - 1 medium, diced
  • Garlic - 2 cloves, minced
  • Bell pepper - 1 medium, diced
  • Cumin powder - 1 teaspoon
  • Chili powder - 1 teaspoon
  • Smoked paprika - 1/2 teaspoon
  • Salt - to taste
  • Black pepper - to taste
  • Corn tortillas - 4 small
  • Avocado - 1 medium, sliced
  • Fresh cilantro - 2 tablespoons, chopped
  • Lime - 1, cut into wedges

Steps

  1. Rinse the lentils under cold water and drain.
  2. In a medium saucepan, combine the lentils and water. Bring to a boil over high heat, then reduce to a simmer and cover. Cook for 20-25 minutes until lentils are tender.
  3. While the lentils are cooking, heat olive oil in a skillet over medium heat. Add diced onion and sauté for 3-4 minutes until translucent.
  4. Add minced garlic and diced bell pepper to the skillet and cook for an additional 3-4 minutes until softened.
  5. Once the lentils are cooked, drain any excess water and add them to the skillet with the sautéed vegetables.
  6. Stir in cumin, chili powder, smoked paprika, salt, and black pepper. Cook for another 5 minutes, allowing the flavors to meld together.
  7. Warm the corn tortillas in a dry skillet or microwave until pliable.
  8. Assemble the tacos by spooning the lentil mixture onto each tortilla. Top with sliced avocado and chopped cilantro.
  9. Serve immediately with lime wedges on the side.
