Ingredients

  • Green or brown lentils - 1 cup (200g)
  • Carrot - 1 medium, diced
  • Celery - 1 stalk, diced
  • Onion - 1 medium, diced
  • Garlic - 2 cloves, minced
  • Vegetable broth - 4 cups (960ml)
  • Canned diced tomatoes - 1 cup (240ml)
  • Olive oil - 2 tablespoons (30ml)
  • Bay leaf - 1
  • Ground cumin - 1 teaspoon
  • Paprika - 1 teaspoon
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Fresh parsley - for garnish

Steps

  1. Rinse the lentils under cold water and set aside.
  2. In a large pot, heat the olive oil over medium heat, then add the diced onion, carrot, and celery. Sauté for about 5 minutes until the vegetables start to soften.
  3. Add the minced garlic and cook for an additional minute until fragrant.
  4. Stir in the rinsed lentils, diced tomatoes, vegetable broth, bay leaf, cumin, paprika, salt, and black pepper.
  5. Bring the mixture to a boil, then reduce the heat to low and cover the pot. Let it simmer for 30 minutes, or until the lentils are tender.
  6. Remove the bay leaf and adjust seasoning if necessary.
  7. Serve hot, garnished with fresh parsley.
