- Green or brown lentils - 1 cup (200g)
- Carrot - 1 medium, diced
- Celery - 1 stalk, diced
- Onion - 1 medium, diced
- Garlic - 2 cloves, minced
- Vegetable broth - 4 cups (960ml)
- Canned diced tomatoes - 1 cup (240ml)
- Olive oil - 2 tablespoons (30ml)
- Bay leaf - 1
- Ground cumin - 1 teaspoon
- Paprika - 1 teaspoon
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Fresh parsley - for garnish
Steps
- Rinse the lentils under cold water and set aside.
- In a large pot, heat the olive oil over medium heat, then add the diced onion, carrot, and celery. Sauté for about 5 minutes until the vegetables start to soften.
- Add the minced garlic and cook for an additional minute until fragrant.
- Stir in the rinsed lentils, diced tomatoes, vegetable broth, bay leaf, cumin, paprika, salt, and black pepper.
- Bring the mixture to a boil, then reduce the heat to low and cover the pot. Let it simmer for 30 minutes, or until the lentils are tender.
- Remove the bay leaf and adjust seasoning if necessary.
- Serve hot, garnished with fresh parsley.
