- Olive oil - 2 tablespoons
- Garlic - 4 cloves, minced
- Lemon juice - 2 tablespoons
- Lemon zest - 1 teaspoon
- Fresh parsley - 2 tablespoons, chopped
- Salt - to taste
- Black pepper - to taste
- Nutritional yeast - 2 tablespoons (optional, for a cheesy flavor)
Steps
- Bring a large pot of salted water to a boil and cook the pasta according to package instructions until al dente.
- While the pasta is cooking, heat the olive oil in a large skillet over medium heat.
- Add the minced garlic to the skillet and sauté for about 1-2 minutes until fragrant, being careful not to burn it.
- Once the pasta is cooked, reserve about 1/2 cup of the pasta water and then drain the pasta.
- Add the drained pasta to the skillet with the garlic, and pour in the lemon juice and zest.
- Toss everything together, adding reserved pasta water a little at a time until the desired sauce consistency is reached.
- Stir in the chopped parsley, and season with salt and black pepper to taste.
