  • Garlic - 4 cloves, minced
  • Lemon juice - 2 tablespoons
  • Lemon zest - 1 teaspoon
  • Fresh parsley - 2 tablespoons, chopped
  • Salt - to taste
  • Black pepper - to taste
  • Nutritional yeast - 2 tablespoons (optional, for a cheesy flavor)

Steps

  1. Bring a large pot of salted water to a boil and cook the pasta according to package instructions until al dente.
  2. While the pasta is cooking, heat the olive oil in a large skillet over medium heat.
  3. Add the minced garlic to the skillet and sauté for about 1-2 minutes until fragrant, being careful not to burn it.
  4. Once the pasta is cooked, reserve about 1/2 cup of the pasta water and then drain the pasta.
  5. Add the drained pasta to the skillet with the garlic, and pour in the lemon juice and zest.
  6. Toss everything together, adding reserved pasta water a little at a time until the desired sauce consistency is reached.
  7. Stir in the chopped parsley, and season with salt and black pepper to taste.
