  • Pasta (spaghetti or linguine) - 160 grams
  • Asparagus - 200 grams, trimmed and cut into 2-inch pieces
  • Garlic - 3 cloves, minced
  • Olive oil - 2 tablespoons
  • Lemon juice - 2 tablespoons
  • Lemon zest - 1 teaspoon
  • Nutritional yeast - 2 tablespoons
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Fresh parsley - 2 tablespoons, chopped

Steps

  1. Bring a large pot of salted water to a boil. Add the pasta and cook according to package instructions until al dente. Reserve 1/2 cup of pasta water, then drain the pasta.
  2. While the pasta cooks, heat olive oil in a large skillet over medium heat. Add minced garlic and sauté for about 1 minute until fragrant.
  3. Add the asparagus to the skillet and cook for about 5-7 minutes, stirring occasionally, until tender but still crisp.
  4. Stir in the cooked pasta, lemon juice, lemon zest, nutritional yeast, salt, and black pepper. Toss everything together, adding reserved pasta water as needed to create a light sauce.
  5. Remove from heat and stir in fresh parsley. Serve immediately, garnished with additional lemon zest if desired.
