- Asparagus - 200 grams, trimmed and cut into 2-inch pieces
- Garlic - 3 cloves, minced
- Olive oil - 2 tablespoons
- Lemon juice - 2 tablespoons
- Lemon zest - 1 teaspoon
- Nutritional yeast - 2 tablespoons
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Fresh parsley - 2 tablespoons, chopped
Steps
- Bring a large pot of salted water to a boil. Add the pasta and cook according to package instructions until al dente. Reserve 1/2 cup of pasta water, then drain the pasta.
- While the pasta cooks, heat olive oil in a large skillet over medium heat. Add minced garlic and sauté for about 1 minute until fragrant.
- Add the asparagus to the skillet and cook for about 5-7 minutes, stirring occasionally, until tender but still crisp.
- Stir in the cooked pasta, lemon juice, lemon zest, nutritional yeast, salt, and black pepper. Toss everything together, adding reserved pasta water as needed to create a light sauce.
- Remove from heat and stir in fresh parsley. Serve immediately, garnished with additional lemon zest if desired.
