  • Graham cracker crumbs - 1 cup
  • Coconut oil - 2 tablespoons, melted
  • Maple syrup - 2 tablespoons
  • Cashews - 1 cup, soaked for at least 4 hours
  • Key lime juice - 1/4 cup
  • Coconut cream - 1/2 cup
  • Agave syrup - 2 tablespoons
  • Vanilla extract - 1 teaspoon
  • Zest of 1 key lime
  • Salt - a pinch

Steps

  1. Preheat the oven to 180°C (350°F).
  2. In a mixing bowl, combine graham cracker crumbs, melted coconut oil, and maple syrup. Mix until fully combined.
  3. Press the mixture into the bottom and up the sides of a small pie dish to form the crust. Bake for 10 minutes, then let it cool.
  4. Drain and rinse the soaked cashews. In a blender, combine the cashews, key lime juice, coconut cream, agave syrup, vanilla extract, lime zest, and a pinch of salt. Blend until smooth and creamy.
  5. Pour the filling into the cooled crust, smoothing the top with a spatula.
