- cornmeal - 1 cup
- all-purpose flour - 1/2 cup
- baking powder - 1 tsp
- salt - 1/2 tsp
- black pepper - 1/4 tsp
- onion - 1/4 cup, finely chopped
- green bell pepper - 1/4 cup, finely chopped
- vegan buttermilk - 3/4 cup (made by combining 3/4 cup plant-based milk with 1 tsp vinegar)
- maple syrup - 1 tbsp
- oil for frying - enough to fill a deep pan (about 2 cups)
Steps
- In a bowl, combine cornmeal, all-purpose flour, baking powder, salt, and black pepper.
- In another bowl, mix the vegan buttermilk and maple syrup.
- Pour the wet ingredients into the dry ingredients and stir until just combined. Fold in the chopped onion and green bell pepper.
- Heat oil in a deep pan over medium heat until it reaches 180°C (350°F).
- Using a spoon, drop tablespoon-sized portions of the batter into the hot oil. Fry until golden brown, about 3-4 minutes per side.
- Remove hush puppies from the oil and drain on paper towels. Serve warm.
