Ingredients

  • cornmeal - 1 cup
  • all-purpose flour - 1/2 cup
  • baking powder - 1 tsp
  • salt - 1/2 tsp
  • black pepper - 1/4 tsp
  • onion - 1/4 cup, finely chopped
  • green bell pepper - 1/4 cup, finely chopped
  • vegan buttermilk - 3/4 cup (made by combining 3/4 cup plant-based milk with 1 tsp vinegar)
  • maple syrup - 1 tbsp
  • oil for frying - enough to fill a deep pan (about 2 cups)

Steps

  1. In a bowl, combine cornmeal, all-purpose flour, baking powder, salt, and black pepper.
  2. In another bowl, mix the vegan buttermilk and maple syrup.
  3. Pour the wet ingredients into the dry ingredients and stir until just combined. Fold in the chopped onion and green bell pepper.
  4. Heat oil in a deep pan over medium heat until it reaches 180°C (350°F).
  5. Using a spoon, drop tablespoon-sized portions of the batter into the hot oil. Fry until golden brown, about 3-4 minutes per side.
  6. Remove hush puppies from the oil and drain on paper towels. Serve warm.
