- Kidney beans - 240 grams (1 can, drained and rinsed)
- Corn - 150 grams (fresh or frozen)
- Green onions - 2, chopped (for garnish)
- Parsley - 2 tablespoons, chopped (for garnish)
Steps
- Heat the olive oil in a large pot over medium heat. Add the diced onion, green bell pepper, and celery, sautéing for about 5 minutes until softened.
- Stir in the minced garlic and cook for an additional minute until fragrant.
- Add the sliced okra, diced carrot, and cook for another 5 minutes, stirring occasionally.
- Pour in the diced tomatoes and vegetable broth, then add the Cajun seasoning, bay leaf, salt, and black pepper. Bring the mixture to a boil.
- Once boiling, reduce the heat to low and let it simmer for about 15 minutes.
- Add the kidney beans and corn, then simmer for an additional 10 minutes, allowing the flavors to meld together.
- Remove the bay leaf, taste, and adjust seasoning if necessary.
