Ingredients

  • Corn grits - 1 cup

  • Unsweetened almond milk - 1/2 cup
  • Nutritional yeast - 2 tablespoons
  • Olive oil - 1 tablespoon
  • Garlic - 2 cloves, minced
  • Spinach - 2 cups, fresh
  • Cherry tomatoes - 1 cup, halved
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Chopped fresh herbs (parsley or basil) - 2 tablespoons

Steps

  1. In a medium saucepan, bring 3 cups of water to a boil.
  2. Slowly whisk in the corn grits, reduce heat to low, and cook for about 20 minutes, stirring frequently until thickened.
  3. In a separate skillet, heat olive oil over medium heat, then add minced garlic and sauté until fragrant, about 1 minute.
