Ingredients

  • Green beans - 200 grams, trimmed
  • Mushrooms - 150 grams, sliced
  • Onion - 1 small, diced
  • Garlic - 2 cloves, minced
  • Almond milk - 120 ml
  • Vegetable broth - 60 ml
  • All-purpose flour - 2 tablespoons
  • Nutritional yeast - 2 tablespoons
  • Soy sauce - 1 tablespoon
  • Olive oil - 1 tablespoon
  • Thyme - 1 teaspoon, dried
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Panko breadcrumbs - 30 grams
  • Fresh parsley - for garnish

Steps

  1. Preheat your oven to 180°C (350°F).
  2. In a pot of boiling water, blanch the green beans for 3-4 minutes until bright green and tender-crisp. Drain and set aside.
  3. In a large skillet, heat the olive oil over medium heat. Add the diced onion and sauté for about 3 minutes until translucent.
  4. Add the minced garlic and sliced mushrooms to the skillet and cook for an additional 5-7 minutes until the mushrooms are softened.
  5. Sprinkle the flour over the mushroom mixture and stir well to coat. Cook for 1-2 minutes, then gradually whisk in the almond milk and vegetable broth.
  6. Add the nutritional yeast, soy sauce, thyme, salt, and black pepper. Stir continuously until the mixture thickens, about 5 minutes.
  7. Remove the skillet from heat and fold in the blanched green beans until evenly coated with the sauce.
  8. Transfer the mixture into a small baking dish and spread evenly. Top with panko breadcrumbs.
  9. Bake in the preheated oven for 20 minutes, or until the top is golden and crispy.
  10. Remove from the oven, let cool for a few minutes, and garnish with fresh parsley before serving.
