- Mushrooms - 150 grams, sliced
- Onion - 1 small, diced
- Garlic - 2 cloves, minced
- Almond milk - 120 ml
- Vegetable broth - 60 ml
- All-purpose flour - 2 tablespoons
- Nutritional yeast - 2 tablespoons
- Soy sauce - 1 tablespoon
- Olive oil - 1 tablespoon
- Thyme - 1 teaspoon, dried
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Panko breadcrumbs - 30 grams
- Fresh parsley - for garnish
Steps
- Preheat your oven to 180°C (350°F).
- In a pot of boiling water, blanch the green beans for 3-4 minutes until bright green and tender-crisp. Drain and set aside.
- In a large skillet, heat the olive oil over medium heat. Add the diced onion and sauté for about 3 minutes until translucent.
- Add the minced garlic and sliced mushrooms to the skillet and cook for an additional 5-7 minutes until the mushrooms are softened.
- Sprinkle the flour over the mushroom mixture and stir well to coat. Cook for 1-2 minutes, then gradually whisk in the almond milk and vegetable broth.
- Add the nutritional yeast, soy sauce, thyme, salt, and black pepper. Stir continuously until the mixture thickens, about 5 minutes.
- Remove the skillet from heat and fold in the blanched green beans until evenly coated with the sauce.
- Transfer the mixture into a small baking dish and spread evenly. Top with panko breadcrumbs.
- Bake in the preheated oven for 20 minutes, or until the top is golden and crispy.
