Ingredients
- sweet potatoes - 300 grams
- all-purpose flour - 120 grams
- nutritional yeast - 2 tablespoons
- salt - 1 teaspoon
- olive oil - 2 tablespoons
- fresh sage - 6 leaves
- garlic - 2 cloves
- black pepper - to taste
Steps
- Preheat the oven to 200°C (400°F).
- Pierce the sweet potatoes with a fork and bake them in the oven for about 30 minutes or until soft.
- Once the sweet potatoes are cooked, allow them to cool slightly, then peel and mash them in a bowl.
- Add the all-purpose flour, nutritional yeast, and salt to the mashed sweet potatoes, mixing until a dough forms.
- Divide the dough into 4 pieces and roll each piece into a long rope, about 2 cm in diameter.
- Cut the ropes into 2 cm pieces to form the gnocchi, and use a fork to gently press down on each piece to create grooves.
- Bring a large pot of salted water to a boil, then add the gnocchi in batches, cooking them until they float to the surface (about 2-3 minutes).
- In a separate pan, heat the olive oil over medium heat, add minced garlic and chopped sage, and sauté for 1-2 minutes until fragrant.
- Once the gnocchi are cooked, drain them and add to the pan with the garlic and sage, tossing gently to coat.
- Serve warm, seasoned with black pepper to taste.
