Ingredients

  • sweet potatoes - 300 grams
  • all-purpose flour - 120 grams
  • nutritional yeast - 2 tablespoons
  • salt - 1 teaspoon
  • olive oil - 2 tablespoons
  • fresh sage - 6 leaves
  • garlic - 2 cloves
  • black pepper - to taste

Steps

  1. Preheat the oven to 200°C (400°F).
  2. Pierce the sweet potatoes with a fork and bake them in the oven for about 30 minutes or until soft.
  3. Once the sweet potatoes are cooked, allow them to cool slightly, then peel and mash them in a bowl.
  4. Add the all-purpose flour, nutritional yeast, and salt to the mashed sweet potatoes, mixing until a dough forms.
  5. Divide the dough into 4 pieces and roll each piece into a long rope, about 2 cm in diameter.
  6. Cut the ropes into 2 cm pieces to form the gnocchi, and use a fork to gently press down on each piece to create grooves.
  7. Bring a large pot of salted water to a boil, then add the gnocchi in batches, cooking them until they float to the surface (about 2-3 minutes).
  8. In a separate pan, heat the olive oil over medium heat, add minced garlic and chopped sage, and sauté for 1-2 minutes until fragrant.
  9. Once the gnocchi are cooked, drain them and add to the pan with the garlic and sage, tossing gently to coat.
  10. Serve warm, seasoned with black pepper to taste.
