Ingredients
- Pasta (spaghetti or fettuccine) - 200 grams
- Olive oil - 2 tablespoons
- Garlic, minced - 4 cloves
- Mushrooms, sliced (button or cremini) - 250 grams
- Vegetable broth - 1 cup
- Nutritional yeast - 2 tablespoons
- Lemon juice - 1 tablespoon
- Fresh parsley, chopped - 2 tablespoons
- Salt - to taste
- Black pepper - to taste
Steps
- Cook the pasta according to package instructions in a pot of salted boiling water. Drain and set aside, reserving 1/2 cup of the pasta water.
- In a large skillet, heat the olive oil over medium heat. Add the minced garlic and sauté for 1-2 minutes until fragrant, being careful not to burn it.
- Add the sliced mushrooms to the skillet and cook for 5-7 minutes, stirring occasionally, until they are golden brown and have released their moisture.
- Pour in the vegetable broth and bring to a simmer. Let it cook for about 3-4 minutes to reduce slightly.
- Stir in the nutritional yeast, lemon juice, salt, and black pepper. Mix well to combine all the flavors.
- Add the cooked pasta to the skillet, along with a splash of the reserved pasta water if needed to loosen the sauce. Toss everything together until the pasta is evenly coated.
- Remove from heat and stir in the chopped parsley before serving. Adjust seasoning if necessary.
