  • Spaghetti - 200 grams
  • Vegan butter - 50 grams
  • Garlic - 4 cloves, minced
  • Fresh parsley - 2 tablespoons, chopped
  • Lemon juice - 1 tablespoon
  • Nutritional yeast - 2 tablespoons
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Red pepper flakes - 1/4 teaspoon (optional)

Steps

  1. Bring a large pot of salted water to a boil and cook the spaghetti according to package instructions until al dente, about 8-10 minutes.
  2. While the pasta is cooking, melt the vegan butter in a large skillet over medium heat.
  3. Add the minced garlic to the skillet and sauté for 2-3 minutes until fragrant and lightly golden, being careful not to burn it.
  4. Once the pasta is cooked, reserve 1/2 cup of the pasta water, then drain the spaghetti.
  5. Add the drained spaghetti to the skillet with the garlic butter, along with the reserved pasta water, lemon juice, nutritional yeast, salt, black pepper, and red pepper flakes if using.
  6. Toss everything together over low heat for 2-3 minutes until the pasta is well coated and heated through.
  7. Remove from heat and stir in the chopped parsley before serving.
