Ingredients

  • Almond flour - 100 grams
  • Coconut oil - 30 grams (melted)
  • Maple syrup - 2 tablespoons
  • Salt - 1/4 teaspoon
  • Coconut cream - 200 grams (chilled)
  • Powdered sugar - 2 tablespoons
  • Vanilla extract - 1 teaspoon
  • Assorted fresh fruits (berries, kiwi, mango) - 150 grams

Steps

  1. Preheat the oven to 180°C (350°F).
  2. In a mixing bowl, combine almond flour, melted coconut oil, maple syrup, and salt to form a dough.
  3. Press the dough into the bottom and sides of a 20 cm tart pan evenly.
  4. Bake the crust in the preheated oven for 15 minutes or until golden brown. Remove and let cool.
  5. In another bowl, whip the chilled coconut cream with powdered sugar and vanilla extract until fluffy.
  6. Spread the whipped coconut cream evenly over the cooled tart crust.
  7. Slice the assorted fresh fruits and arrange them beautifully on top of the coconut cream.
  8. Refrigerate the tart for at least 15 minutes before serving to set the cream.
