- Fritos corn chips - 150g
- Canned black beans - 1 can (400g), drained and rinsed
- Canned diced tomatoes - 1 can (400g)
- Red onion - 1 small, diced
- Bell pepper - 1 small, diced
- Garlic - 2 cloves, minced
- Chili powder - 1 tablespoon
- Cumin - 1 teaspoon
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Olive oil - 1 tablespoon
- Vegan cheese shreds - 100g
- Green onions - 2, chopped
- Fresh cilantro - 2 tablespoons, chopped
- Avocado - 1, diced (for topping)
Steps
- In a skillet, heat the olive oil over medium heat and sauté the diced red onion and bell pepper until they are soft, about 5 minutes.
- Add minced garlic, chili powder, cumin, salt, and black pepper to the skillet and cook for another minute until fragrant.
- Stir in the black beans and diced tomatoes (with their juice), and let the mixture simmer for about 10 minutes, stirring occasionally.
- While the chili simmers, preheat your oven to 180°C (350°F).
- Once the chili is ready, in an oven-safe dish, layer half of the Fritos corn chips at the bottom.
- Top the corn chips with half of the chili mixture and sprinkle with half of the vegan cheese shreds.
- Repeat the layers with the remaining Fritos, chili, and vegan cheese.
- Bake in the preheated oven for 10-15 minutes, or until the cheese is melted and bubbly.
- Remove from the oven and top with chopped green onions, cilantro, and diced avocado before serving.
