Ingredients

  • Fritos corn chips - 150g
  • Canned black beans - 1 can (400g), drained and rinsed
  • Canned diced tomatoes - 1 can (400g)
  • Red onion - 1 small, diced
  • Bell pepper - 1 small, diced
  • Garlic - 2 cloves, minced
  • Chili powder - 1 tablespoon
  • Cumin - 1 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Olive oil - 1 tablespoon
  • Vegan cheese shreds - 100g
  • Green onions - 2, chopped
  • Fresh cilantro - 2 tablespoons, chopped
  • Avocado - 1, diced (for topping)

Steps

  1. In a skillet, heat the olive oil over medium heat and sauté the diced red onion and bell pepper until they are soft, about 5 minutes.
  2. Add minced garlic, chili powder, cumin, salt, and black pepper to the skillet and cook for another minute until fragrant.
  3. Stir in the black beans and diced tomatoes (with their juice), and let the mixture simmer for about 10 minutes, stirring occasionally.
  4. While the chili simmers, preheat your oven to 180°C (350°F).
  5. Once the chili is ready, in an oven-safe dish, layer half of the Fritos corn chips at the bottom.
  6. Top the corn chips with half of the chili mixture and sprinkle with half of the vegan cheese shreds.
  7. Repeat the layers with the remaining Fritos, chili, and vegan cheese.
  8. Bake in the preheated oven for 10-15 minutes, or until the cheese is melted and bubbly.
  9. Remove from the oven and top with chopped green onions, cilantro, and diced avocado before serving.
