Ingredients

  • young green jackfruit - 1 can (400g)
  • all-purpose flour - 1/2 cup (60g)
  • cornstarch - 1/4 cup (30g)
  • sea salt - 1 tsp
  • black pepper - 1/2 tsp
  • paprika - 1 tsp
  • cayenne pepper - 1/4 tsp
  • plant-based milk - 3/4 cup (180ml)
  • oil for frying - 1/2 cup (120ml)
  • small corn tortillas - 4
  • shredded cabbage - 1 cup (100g)
  • carrot, grated - 1/2 medium (50g)
  • lime juice - 2 tbsp (30ml)
  • avocado - 1 medium, sliced
  • fresh cilantro - 1/4 cup, chopped
  • sriracha sauce - to taste

Steps

  1. Drain and rinse the jackfruit, then cut it into smaller pieces, removing any seeds.
  2. In a bowl, whisk together the flour, cornstarch, salt, black pepper, paprika, and cayenne pepper.
  3. Add the plant-based milk to the dry ingredients and mix until smooth to create a batter.
  4. Heat the oil in a frying pan over medium heat.
  5. Dip each piece of jackfruit into the batter, allowing excess to drip off, then carefully place them in the hot oil.
  6. Fry the jackfruit for about 3-4 minutes on each side or until golden brown and crispy. Remove and drain on paper towels.
  7. In a separate bowl, combine the shredded cabbage, grated carrot, lime juice, and a pinch of salt to make the slaw.
  8. Warm the corn tortillas in a dry skillet or microwave for a few seconds until pliable.
  9. Assemble the tacos by placing a few pieces of fried jackfruit on each tortilla, topping with the slaw, avocado slices, and chopped cilantro.
  10. Drizzle with sriracha sauce to taste and serve immediately.
