- young green jackfruit - 1 can (400g)
- all-purpose flour - 1/2 cup (60g)
- cornstarch - 1/4 cup (30g)
- sea salt - 1 tsp
- black pepper - 1/2 tsp
- paprika - 1 tsp
- cayenne pepper - 1/4 tsp
- plant-based milk - 3/4 cup (180ml)
- oil for frying - 1/2 cup (120ml)
- small corn tortillas - 4
- shredded cabbage - 1 cup (100g)
- carrot, grated - 1/2 medium (50g)
- lime juice - 2 tbsp (30ml)
- avocado - 1 medium, sliced
- fresh cilantro - 1/4 cup, chopped
- sriracha sauce - to taste
Steps
- Drain and rinse the jackfruit, then cut it into smaller pieces, removing any seeds.
- In a bowl, whisk together the flour, cornstarch, salt, black pepper, paprika, and cayenne pepper.
- Add the plant-based milk to the dry ingredients and mix until smooth to create a batter.
- Heat the oil in a frying pan over medium heat.
- Dip each piece of jackfruit into the batter, allowing excess to drip off, then carefully place them in the hot oil.
- Fry the jackfruit for about 3-4 minutes on each side or until golden brown and crispy. Remove and drain on paper towels.
- In a separate bowl, combine the shredded cabbage, grated carrot, lime juice, and a pinch of salt to make the slaw.
- Warm the corn tortillas in a dry skillet or microwave for a few seconds until pliable.
- Assemble the tacos by placing a few pieces of fried jackfruit on each tortilla, topping with the slaw, avocado slices, and chopped cilantro.
- Drizzle with sriracha sauce to taste and serve immediately.
