  • Nori sheets - 2 pieces
  • Soy sauce - 2 tablespoons

  • Garlic powder - 1 teaspoon
  • Smoked paprika - 1 teaspoon
  • Cornstarch - 1/2 cup
  • Plant-based milk - 1/2 cup
  • Bread crumbs - 1 cup
  • Burger buns - 2
  • Lettuce - 2 leaves
  • Tomato - 1, sliced
  • Vegan mayonnaise - 4 tablespoons
  • Pickles - 4 slices
  • Salt - to taste
  • Pepper - to taste

Steps

  1. Preheat the oven to 200°C (400°F).
  2. Slice the eggplant into thick fillets (about 1 cm) and sprinkle with salt. Let it sit for 10 minutes to draw out moisture, then rinse and pat dry.
  3. In a small bowl, combine soy sauce, lemon juice, garlic powder, smoked paprika, salt, and pepper. Marinate the eggplant fillets in this mixture for about 15 minutes.
  4. Prepare three bowls: one with cornstarch, one with plant-based milk, and one with breadcrumbs.
  5. Dip each marinated eggplant fillet first into the cornstarch, then into the plant-based milk, and finally coat with breadcrumbs.
  6. Place the coated eggplant fillets on a baking tray lined with parchment paper and bake for 20 minutes, flipping halfway through, until golden and crispy.
  7. While the eggplant is baking, mix vegan mayonnaise with chopped pickles to create a tartar sauce.
  8. Toast the burger buns until golden brown.
  9. Assemble the sandwiches by spreading the tartar sauce on the bottom bun, adding a crispy eggplant fillet, a lettuce leaf, and tomato slices. Top with the other half of the bun.
