Steps
- Preheat the oven to 200°C (400°F).
- Slice the eggplant into thick fillets (about 1 cm) and sprinkle with salt. Let it sit for 10 minutes to draw out moisture, then rinse and pat dry.
- In a small bowl, combine soy sauce, lemon juice, garlic powder, smoked paprika, salt, and pepper. Marinate the eggplant fillets in this mixture for about 15 minutes.
- Prepare three bowls: one with cornstarch, one with plant-based milk, and one with breadcrumbs.
- Dip each marinated eggplant fillet first into the cornstarch, then into the plant-based milk, and finally coat with breadcrumbs.
- Place the coated eggplant fillets on a baking tray lined with parchment paper and bake for 20 minutes, flipping halfway through, until golden and crispy.
- While the eggplant is baking, mix vegan mayonnaise with chopped pickles to create a tartar sauce.
- Toast the burger buns until golden brown.
- Assemble the sandwiches by spreading the tartar sauce on the bottom bun, adding a crispy eggplant fillet, a lettuce leaf, and tomato slices. Top with the other half of the bun.
