Ingredients

  • Chickpeas - 200 grams (canned or soaked and cooked)
  • Fresh parsley - 30 grams, chopped
  • Fresh cilantro - 30 grams, chopped
  • Garlic - 2 cloves, minced
  • Cumin powder - 1 teaspoon
  • Coriander powder - 1 teaspoon
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Baking powder - 1/2 teaspoon
  • All-purpose flour - 2 tablespoons
  • Olive oil - for frying
  • Whole wheat tortillas - 2 large
  • Tomato - 1 medium, diced
  • Cucumber - 1 medium, diced
  • Red onion - 1/4 medium, thinly sliced
  • Tahini - 2 tablespoons
  • Lemon juice - 1 tablespoon
  • Water - 1-2 tablespoons (to thin tahini sauce)

Steps

  1. In a food processor, combine the chickpeas, parsley, cilantro, garlic, cumin, coriander, salt, black pepper, baking powder, and flour. Pulse until a coarse mixture forms.
  2. Shape the mixture into small balls or patties (about 12-14 pieces) and place them on a plate.
  3. Heat olive oil in a frying pan over medium heat. Fry the falafel for about 3-4 minutes on each side, or until golden brown and crispy. Remove and drain on paper towels.
  4. While the falafel cooks, prepare the tahini sauce by whisking together tahini, lemon juice, and enough water to reach a pourable consistency. Season with a pinch of salt.
  5. Warm the whole wheat tortillas in a dry skillet or microwave.
  6. To assemble the wraps, place 3-4 falafel on each tortilla, add diced tomatoes, cucumbers, and red onion. Drizzle with tahini sauce.
  7. Wrap the tortillas tightly around the filling, slice in half if desired, and serve immediately.
