- Chickpeas - 200 grams (canned or soaked and cooked)
- Fresh parsley - 30 grams, chopped
- Fresh cilantro - 30 grams, chopped
- Garlic - 2 cloves, minced
- Cumin powder - 1 teaspoon
- Coriander powder - 1 teaspoon
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Baking powder - 1/2 teaspoon
- All-purpose flour - 2 tablespoons
- Olive oil - for frying
- Whole wheat tortillas - 2 large
- Tomato - 1 medium, diced
- Cucumber - 1 medium, diced
- Red onion - 1/4 medium, thinly sliced
- Tahini - 2 tablespoons
- Lemon juice - 1 tablespoon
- Water - 1-2 tablespoons (to thin tahini sauce)
Steps
- In a food processor, combine the chickpeas, parsley, cilantro, garlic, cumin, coriander, salt, black pepper, baking powder, and flour. Pulse until a coarse mixture forms.
- Shape the mixture into small balls or patties (about 12-14 pieces) and place them on a plate.
- Heat olive oil in a frying pan over medium heat. Fry the falafel for about 3-4 minutes on each side, or until golden brown and crispy. Remove and drain on paper towels.
- While the falafel cooks, prepare the tahini sauce by whisking together tahini, lemon juice, and enough water to reach a pourable consistency. Season with a pinch of salt.
- Warm the whole wheat tortillas in a dry skillet or microwave.
- To assemble the wraps, place 3-4 falafel on each tortilla, add diced tomatoes, cucumbers, and red onion. Drizzle with tahini sauce.
- Wrap the tortillas tightly around the filling, slice in half if desired, and serve immediately.
