Ingredients

  • Chickpeas - 240 grams (1 1/2 cups, cooked)
  • Fresh parsley - 30 grams (1/2 cup, chopped)
  • Fresh cilantro - 30 grams (1/2 cup, chopped)
  • Garlic - 2 cloves, minced
  • Onion - 50 grams (1/4 cup, finely chopped)
  • Ground cumin - 1 teaspoon
  • Ground coriander - 1 teaspoon
  • Baking powder - 1/2 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • All-purpose flour - 30 grams (1/4 cup)
  • Olive oil - for frying (about 60 ml)
  • Tahini - 30 grams (2 tablespoons)
  • Lemon juice - 15 ml (1 tablespoon)
  • Water - 30 ml (2 tablespoons)
  • Salt - a pinch (for tahini sauce)

Steps

  1. In a food processor, combine the cooked chickpeas, parsley, cilantro, garlic, onion, cumin, coriander, baking powder, salt, and black pepper. Pulse until the mixture is well combined but still slightly chunky.
  2. Transfer the mixture to a bowl and stir in the flour until fully incorporated. Cover and refrigerate for about 15 minutes.
  3. While the mixture chills, prepare the tahini sauce by whisking together tahini, lemon juice, water, and a pinch of salt in a small bowl until smooth. Adjust the consistency with more water if needed.
  4. Heat olive oil in a frying pan over medium heat. Scoop tablespoon-sized portions of the falafel mixture and form into small balls or patties.
  5. Fry the falafel bites for 3-4 minutes on each side, or until golden brown and crispy. Remove and drain on paper towels.
  6. Serve the vegan falafel bites hot with the tahini sauce on the side for dipping.
