Ingredients

  • Firm tofu - 200 grams
  • Bell pepper (red) - 1 medium
  • Bell pepper (green) - 1 medium
  • Red onion - 1 medium
  • Zucchini - 1 medium
  • Olive oil - 2 tablespoons
  • Lime juice - 1 tablespoon
  • Cumin powder - 1 teaspoon
  • Paprika - 1 teaspoon
  • Garlic powder - 1 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Wooden or metal skewers - 4

Steps

  1. Press the tofu for 15 minutes to remove excess moisture, then cut into 2 cm cubes.
  2. Chop the bell peppers, red onion, and zucchini into similar size pieces (about 2 cm).
  3. In a bowl, whisk together olive oil, lime juice, cumin, paprika, garlic powder, salt, and black pepper.
  4. Add the cubed tofu and chopped vegetables to the bowl, tossing to coat them evenly in the marinade. Let marinate for at least 10 minutes.
  5. Preheat the grill or grill pan over medium-high heat.
  6. Thread the marinated tofu and vegetables onto the skewers, alternating between tofu and veggies.
  7. Grill the skewers for about 10-12 minutes, turning occasionally, until the vegetables are tender and slightly charred.
  8. Remove from the grill and serve immediately, optionally with a lime wedge and your favorite dipping sauce.
