- Firm tofu - 200 grams
- Bell pepper (red) - 1 medium
- Bell pepper (green) - 1 medium
- Red onion - 1 medium
- Zucchini - 1 medium
- Olive oil - 2 tablespoons
- Lime juice - 1 tablespoon
- Cumin powder - 1 teaspoon
- Paprika - 1 teaspoon
- Garlic powder - 1 teaspoon
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Wooden or metal skewers - 4
Steps
- Press the tofu for 15 minutes to remove excess moisture, then cut into 2 cm cubes.
- Chop the bell peppers, red onion, and zucchini into similar size pieces (about 2 cm).
- In a bowl, whisk together olive oil, lime juice, cumin, paprika, garlic powder, salt, and black pepper.
- Add the cubed tofu and chopped vegetables to the bowl, tossing to coat them evenly in the marinade. Let marinate for at least 10 minutes.
- Preheat the grill or grill pan over medium-high heat.
- Thread the marinated tofu and vegetables onto the skewers, alternating between tofu and veggies.
- Grill the skewers for about 10-12 minutes, turning occasionally, until the vegetables are tender and slightly charred.
- Remove from the grill and serve immediately, optionally with a lime wedge and your favorite dipping sauce.
