- all-purpose flour - 1 cup (120g)
- granulated sugar - 1/4 cup (50g)
- baking powder - 1 tsp
- baking soda - 1/2 tsp
- salt - 1/4 tsp
- almond milk - 1/2 cup (120ml)
- apple cider vinegar - 1 tsp
- vanilla extract - 1 tsp
- coconut oil - 2 tbsp (30ml), melted
- powdered sugar - 1/2 cup (60g) for glaze
- cocoa powder - 2 tbsp (15g) for glaze
- water - 2 tbsp (30ml) for glaze
Steps
- Preheat the oven to 180°C (350°F) and lightly grease a donut pan.
- In a large bowl, mix together the flour, sugar, baking powder, baking soda, and salt.
- In a separate bowl, combine the almond milk and apple cider vinegar, and let it sit for 5 minutes to curdle.
- Add the vanilla extract and melted coconut oil to the almond milk mixture and whisk until combined.
- Pour the wet ingredients into the dry ingredients and stir until just combined; do not overmix.
- Spoon the batter into the prepared donut pan, filling each cavity about 3/4 full.
- Bake for 10-12 minutes, or until a toothpick inserted into the center comes out clean.
- Let the donuts cool in the pan for 5 minutes before transferring them to a wire rack.
- In a small bowl, mix the powdered sugar, cocoa powder, and water to create the chocolate glaze.
- Dip the cooled donuts into the glaze, allowing any excess to drip off, then place them back on the wire rack to set.
