Ingredients

  • all-purpose flour - 1 cup (120g)
  • granulated sugar - 1/4 cup (50g)
  • baking powder - 1 tsp
  • baking soda - 1/2 tsp
  • salt - 1/4 tsp
  • almond milk - 1/2 cup (120ml)
  • apple cider vinegar - 1 tsp
  • vanilla extract - 1 tsp
  • coconut oil - 2 tbsp (30ml), melted
  • powdered sugar - 1/2 cup (60g) for glaze
  • cocoa powder - 2 tbsp (15g) for glaze
  • water - 2 tbsp (30ml) for glaze

Steps

  1. Preheat the oven to 180°C (350°F) and lightly grease a donut pan.
  2. In a large bowl, mix together the flour, sugar, baking powder, baking soda, and salt.
  3. In a separate bowl, combine the almond milk and apple cider vinegar, and let it sit for 5 minutes to curdle.
  4. Add the vanilla extract and melted coconut oil to the almond milk mixture and whisk until combined.
  5. Pour the wet ingredients into the dry ingredients and stir until just combined; do not overmix.
  6. Spoon the batter into the prepared donut pan, filling each cavity about 3/4 full.
  7. Bake for 10-12 minutes, or until a toothpick inserted into the center comes out clean.
  8. Let the donuts cool in the pan for 5 minutes before transferring them to a wire rack.
  9. In a small bowl, mix the powdered sugar, cocoa powder, and water to create the chocolate glaze.
  10. Dip the cooled donuts into the glaze, allowing any excess to drip off, then place them back on the wire rack to set.
