  • Small Yukon Gold potatoes - 4 medium-sized (about 400g)
  • Silken tofu - 100g
  • Dijon mustard - 1 tablespoon
  • Apple cider vinegar - 1 teaspoon
  • Nutritional yeast - 2 tablespoons
  • Garlic powder - 1/2 teaspoon
  • Onion powder - 1/2 teaspoon
  • Salt - 1/2 teaspoon (or to taste)
  • Black pepper - 1/4 teaspoon
  • Paprika - 1/2 teaspoon (for garnish)
  • Chives, chopped - 1 tablespoon (for garnish)

Steps

  1. Preheat your oven to 200°C (400°F).
  2. Wash the small Yukon Gold potatoes thoroughly and pierce them a few times with a fork.
  3. Place the potatoes on a baking tray and bake in the preheated oven for 25-30 minutes, or until they are tender when pierced with a fork.
  4. While the potatoes are baking, prepare the filling by blending silken tofu, Dijon mustard, apple cider vinegar, nutritional yeast, garlic powder, onion powder, salt, and black pepper in a food processor until smooth and creamy.
  5. Once the potatoes are done, remove them from the oven and let them cool slightly.
  6. Cut each potato in half lengthwise and carefully scoop out a small portion of the flesh to create a cavity for the filling.
  7. Mix the scooped potato flesh into the tofu mixture for added flavor and creaminess.
  8. Using a spoon or piping bag, fill each potato half with the tofu mixture.
  9. Sprinkle the tops with paprika and garnish with chopped chives.
  10. Serve immediately or refrigerate until ready to serve.
