- Dijon mustard - 1 tablespoon
- Apple cider vinegar - 1 teaspoon
- Nutritional yeast - 2 tablespoons
- Garlic powder - 1/2 teaspoon
- Onion powder - 1/2 teaspoon
- Salt - 1/2 teaspoon (or to taste)
- Black pepper - 1/4 teaspoon
- Paprika - 1/2 teaspoon (for garnish)
- Chives, chopped - 1 tablespoon (for garnish)
Steps
- Preheat your oven to 200°C (400°F).
- Wash the small Yukon Gold potatoes thoroughly and pierce them a few times with a fork.
- Place the potatoes on a baking tray and bake in the preheated oven for 25-30 minutes, or until they are tender when pierced with a fork.
- While the potatoes are baking, prepare the filling by blending silken tofu, Dijon mustard, apple cider vinegar, nutritional yeast, garlic powder, onion powder, salt, and black pepper in a food processor until smooth and creamy.
- Once the potatoes are done, remove them from the oven and let them cool slightly.
- Cut each potato in half lengthwise and carefully scoop out a small portion of the flesh to create a cavity for the filling.
- Mix the scooped potato flesh into the tofu mixture for added flavor and creaminess.
- Using a spoon or piping bag, fill each potato half with the tofu mixture.
- Sprinkle the tops with paprika and garnish with chopped chives.
