- all-purpose flour - 1 cup (120g)
- plant-based milk (almond, soy, or oat) - 1 cup (240ml)
- flaxseed meal - 2 tablespoons (30g)
- water - 6 tablespoons (90ml)
- vanilla extract - 1 teaspoon (5ml)
- salt - 1/4 teaspoon (1.5g)
- coconut oil (for cooking) - 2 tablespoons (30ml)
Steps
- In a small bowl, mix the flaxseed meal with water and let it sit for about 5 minutes to thicken.
- In a large mixing bowl, combine the all-purpose flour and salt.
- Add the plant-based milk, vanilla extract, and the flaxseed mixture to the flour, and whisk until smooth and lump-free.
- Heat a non-stick skillet over medium heat and add 1/2 tablespoon of coconut oil, swirling to coat the pan.
- Pour about 1/4 cup (60ml) of the batter into the skillet, tilting the pan to spread the batter evenly into a thin layer.
- Cook for 2-3 minutes until the edges start to lift and the bottom is lightly golden, then carefully flip and cook for another 1-2 minutes.
- Repeat with the remaining batter, adding more coconut oil as needed, and stack the crepes on a plate.
- Serve warm with your choice of fillings and toppings, such as fresh fruits, maple syrup, or vegan yogurt.
