- sweet corn - 1 cup (fresh or canned)
- all-purpose flour - 1/2 cup
- cornmeal - 1/4 cup
- green onion - 2, finely chopped
- fresh cilantro - 1/4 cup, chopped
- ground flaxseed - 1 tablespoon
- water - 3 tablespoons
- baking powder - 1 teaspoon
- salt - 1/2 teaspoon
- black pepper - 1/4 teaspoon
- olive oil - 2 tablespoons (for frying)
Steps
- In a small bowl, mix ground flaxseed with water and let it sit for 5 minutes to form a flax egg.
- In a large mixing bowl, combine sweet corn, all-purpose flour, cornmeal, chopped green onion, cilantro, baking powder, salt, and black pepper.
- Add the flax egg to the dry ingredients and mix well until combined. The batter should be thick but not too dry; add a splash of water if necessary.
- Heat 1 tablespoon of olive oil in a non-stick skillet over medium heat.
- Using a spoon, drop about 2 tablespoons of the batter into the skillet for each fritter, flattening them slightly.
- Cook for 3-4 minutes on each side or until golden brown and crispy. Repeat with remaining batter, adding more oil as needed.
- Serve hot with your favorite vegan dipping sauce or salsa.
