Ingredients

  • sweet corn - 1 cup (fresh or canned)
  • all-purpose flour - 1/2 cup
  • cornmeal - 1/4 cup
  • green onion - 2, finely chopped
  • fresh cilantro - 1/4 cup, chopped
  • ground flaxseed - 1 tablespoon
  • water - 3 tablespoons
  • baking powder - 1 teaspoon
  • salt - 1/2 teaspoon
  • black pepper - 1/4 teaspoon
  • olive oil - 2 tablespoons (for frying)

Steps

  1. In a small bowl, mix ground flaxseed with water and let it sit for 5 minutes to form a flax egg.
  2. In a large mixing bowl, combine sweet corn, all-purpose flour, cornmeal, chopped green onion, cilantro, baking powder, salt, and black pepper.
  3. Add the flax egg to the dry ingredients and mix well until combined. The batter should be thick but not too dry; add a splash of water if necessary.
  4. Heat 1 tablespoon of olive oil in a non-stick skillet over medium heat.
  5. Using a spoon, drop about 2 tablespoons of the batter into the skillet for each fritter, flattening them slightly.
  6. Cook for 3-4 minutes on each side or until golden brown and crispy. Repeat with remaining batter, adding more oil as needed.
  7. Serve hot with your favorite vegan dipping sauce or salsa.
