Ingredients

  • Fresh corn kernels - 2 cups
  • Potatoes, diced - 1 medium (about 200g)
  • Carrot, diced - 1 medium (about 70g)
  • Onion, chopped - 1 small (about 100g)
  • Garlic, minced - 2 cloves
  • Vegetable broth - 2 cups (480ml)
  • Coconut milk - 1 cup (240ml)
  • Olive oil - 1 tablespoon
  • Thyme, dried - 1 teaspoon
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Chives, chopped (for garnish) - 2 tablespoons

Steps

  1. In a large pot, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes.
  2. Stir in the minced garlic and diced carrot, cooking for an additional 2 minutes until fragrant.
  3. Add the diced potatoes, corn kernels, vegetable broth, dried thyme, salt, and black pepper to the pot. Bring to a boil.
  4. Once boiling, reduce the heat to a simmer and cook for about 15 minutes, or until the potatoes are tender.
  5. Stir in the coconut milk and let the chowder simmer for another 5 minutes to meld the flavors.
  6. Remove from heat and use an immersion blender to blend the chowder to your desired consistency, leaving some chunks for texture.
  7. Serve hot, garnished with chopped chives.
