Ingredients

  • all-purpose flour - 250g
  • almond milk - 120ml
  • coconut oil - 30g, melted
  • sugar - 50g
  • active dry yeast - 7g
  • ground cinnamon - 1 tbsp
  • salt - 1/4 tsp
  • vanilla extract - 1 tsp
  • brown sugar - 50g
  • powdered sugar - 50g
  • maple syrup - 1 tbsp
  • water - 1 tbsp

Steps

  1. In a small bowl, combine the almond milk, melted coconut oil, and sugar. Heat slightly until warm (not hot) to activate the yeast.
  2. Sprinkle the active dry yeast over the warm mixture and let it sit for about 5 minutes until frothy.
  3. In a large mixing bowl, combine the all-purpose flour, salt, and ground cinnamon. Make a well in the center and pour in the yeast mixture and vanilla extract.
  4. Mix together until a dough forms, then knead on a floured surface for about 5-7 minutes until smooth and elastic.
  5. Place the dough in a greased bowl, cover with a damp cloth, and let it rise in a warm place for about 30 minutes or until doubled in size.
  6. Once risen, roll out the dough into a rectangle (approximately 30x20cm). Spread the softened coconut oil over the surface, then sprinkle the brown sugar and ground cinnamon evenly on top.
  7. Roll the dough tightly from the long side, then cut into 6 equal pieces and place them in a greased baking dish.
  8. Cover the rolls with a damp cloth and let them rise for another 15-20 minutes.
  9. Preheat the oven to 180°C (350°F). Bake the cinnamon rolls for 25-30 minutes or until golden brown.
  10. While baking, prepare the glaze by mixing powdered sugar, maple syrup, and water until smooth. Drizzle over the warm rolls before serving.
