Ingredients

  • Long-grain white rice - 1 cup
  • Vegetable broth - 2 cups
  • Fresh cilantro - 1/2 cup, chopped
  • Lime juice - 2 tablespoons
  • Lime zest - 1 teaspoon
  • Olive oil - 1 tablespoon
  • Garlic - 2 cloves, minced
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon

Steps

  1. Rinse the rice under cold water until the water runs clear to remove excess starch.
  2. In a medium saucepan, heat the olive oil over medium heat and add the minced garlic. Sauté for about 1 minute until fragrant.
  3. Add the rinsed rice to the saucepan and stir for 1-2 minutes to lightly toast the rice.
  4. Pour in the vegetable broth, salt, and black pepper. Bring the mixture to a boil.
  5. Once boiling, reduce the heat to low, cover the saucepan, and let it simmer for 15 minutes or until the rice is tender and the liquid is absorbed.
  6. Remove the saucepan from heat and let it sit, covered, for an additional 5 minutes.
  7. Fluff the rice with a fork and stir in the lime juice, lime zest, and chopped cilantro until well combined.
  8. Serve warm as a side dish or as a base for your favorite vegan bowls.
