- Long-grain white rice - 1 cup
- Vegetable broth - 2 cups
- Fresh cilantro - 1/2 cup, chopped
- Lime juice - 2 tablespoons
- Lime zest - 1 teaspoon
- Olive oil - 1 tablespoon
- Garlic - 2 cloves, minced
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
Steps
- Rinse the rice under cold water until the water runs clear to remove excess starch.
- In a medium saucepan, heat the olive oil over medium heat and add the minced garlic. Sauté for about 1 minute until fragrant.
- Add the rinsed rice to the saucepan and stir for 1-2 minutes to lightly toast the rice.
- Pour in the vegetable broth, salt, and black pepper. Bring the mixture to a boil.
- Once boiling, reduce the heat to low, cover the saucepan, and let it simmer for 15 minutes or until the rice is tender and the liquid is absorbed.
- Remove the saucepan from heat and let it sit, covered, for an additional 5 minutes.
- Fluff the rice with a fork and stir in the lime juice, lime zest, and chopped cilantro until well combined.
- Serve warm as a side dish or as a base for your favorite vegan bowls.
