- Elbow macaroni - 200 grams
- Olive oil - 1 tablespoon
- Onion - 1 medium, diced
- Garlic - 3 cloves, minced
- Bell pepper - 1 medium, diced
- Carrot - 1 medium, diced
- Canned black beans - 1 can (400 grams), drained and rinsed
- Canned diced tomatoes - 1 can (400 grams)
- Vegetable broth - 250 milliliters
- Chili powder - 2 teaspoons
- Cumin - 1 teaspoon
- Smoked paprika - 1 teaspoon
- Salt - to taste
- Black pepper - to taste
- Nutritional yeast - 2 tablespoons
- Dairy-free cheese shreds - 100 grams
Steps
- Bring a large pot of salted water to a boil and cook the elbow macaroni according to package instructions until al dente. Drain and set aside.
- In a large skillet, heat the olive oil over medium heat. Add the diced onion and sauté for about 3 minutes until translucent.
- Add the minced garlic, diced bell pepper, and carrot to the skillet, and cook for another 5 minutes until the vegetables are softened.
- Stir in the black beans, diced tomatoes (with their juices), vegetable broth, chili powder, cumin, smoked paprika, salt, and black pepper. Bring to a simmer and cook for 10 minutes, allowing the flavors to meld.
