  • Elbow macaroni - 200 grams
  • Olive oil - 1 tablespoon
  • Onion - 1 medium, diced
  • Garlic - 3 cloves, minced
  • Bell pepper - 1 medium, diced
  • Carrot - 1 medium, diced
  • Canned black beans - 1 can (400 grams), drained and rinsed
  • Canned diced tomatoes - 1 can (400 grams)
  • Vegetable broth - 250 milliliters
  • Chili powder - 2 teaspoons
  • Cumin - 1 teaspoon
  • Smoked paprika - 1 teaspoon
  • Salt - to taste
  • Black pepper - to taste
  • Nutritional yeast - 2 tablespoons
  • Dairy-free cheese shreds - 100 grams

Steps

  1. Bring a large pot of salted water to a boil and cook the elbow macaroni according to package instructions until al dente. Drain and set aside.
  2. In a large skillet, heat the olive oil over medium heat. Add the diced onion and sauté for about 3 minutes until translucent.
  3. Add the minced garlic, diced bell pepper, and carrot to the skillet, and cook for another 5 minutes until the vegetables are softened.
  4. Stir in the black beans, diced tomatoes (with their juices), vegetable broth, chili powder, cumin, smoked paprika, salt, and black pepper. Bring to a simmer and cook for 10 minutes, allowing the flavors to meld.
