- Potato fries - 400 grams

- Chili beans (canned) - 400 grams
- Diced tomatoes (canned) - 200 grams
- Onion - 1 medium, diced
- Garlic - 2 cloves, minced
- Ground cumin - 1 teaspoon
- Smoked paprika - 1 teaspoon
- Chili powder - 1 teaspoon
- Cornstarch - 1 tablespoon
- Nutritional yeast - 1/4 cup
- Cashew milk - 1/2 cup
- Lemon juice - 1 tablespoon
- Fresh cilantro - for garnish
Steps
- Preheat your oven to 200°C (400°F).
- Toss the potato fries with olive oil, salt, and black pepper in a bowl and spread them out on a baking sheet.
- Bake the fries in the preheated oven for 25-30 minutes, flipping halfway through, until crispy and golden.
- While the fries are baking, heat a pan over medium heat and add a splash of water.
- Add the diced onion and minced garlic to the pan and sauté until the onion is translucent, about 5 minutes.
- Stir in the chili beans, diced tomatoes, ground cumin, smoked paprika, and chili powder, and simmer for 10 minutes to let the flavors meld.
- In a separate saucepan, combine the nutritional yeast, cornstarch, cashew milk, and lemon juice over medium heat, stirring constantly until it thickens into a cheese sauce, about 5 minutes.
- Once the fries are done, remove them from the oven and place them on a serving platter.
- Top the fries with the chili mixture and drizzle the vegan cheese sauce over the top.
- Garnish with fresh cilantro and serve immediately.
