  • Raw cashews - 100 grams
  • Nutritional yeast - 3 tablespoons
  • Garlic powder - 1 teaspoon
  • Onion powder - 1 teaspoon
  • Lemon juice - 2 tablespoons
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Chopped fresh herbs (parsley, chives) - 2 tablespoons
  • Walnuts (for coating) - 50 grams

Steps

  1. Soak the cashews in water for at least 4 hours or overnight, then drain and rinse.
  2. In a food processor, combine the soaked cashews, nutritional yeast, garlic powder, onion powder, lemon juice, salt, and black pepper.
  3. Blend until smooth and creamy, scraping down the sides as needed.
  4. Add the chopped herbs and pulse a few times to mix them in.
  5. Transfer the mixture to a bowl and shape it into a ball using your hands.
  6. Chop the walnuts finely and spread them on a plate.
  7. Roll the cheese ball in the chopped walnuts until fully coated.
