  • Raw cashews - 1/2 cup, soaked for 2 hours and drained
  • Unsweetened almond milk - 1/2 cup
  • Lemon juice - 1 tablespoon
  • Dijon mustard - 1 teaspoon
  • Breadcrumbs - 1/2 cup
  • Fresh parsley - 2 tablespoons, chopped (for garnish)

Steps

  1. Preheat your oven to 200°C (400°F).
  2. In a large bowl, toss the cauliflower florets with olive oil, salt, black pepper, garlic powder, and nutritional yeast until well coated.
  3. Spread the seasoned cauliflower onto a baking sheet and roast for 20 minutes, or until golden and tender, stirring halfway through.
