- Pasta (fusilli or penne) - 200 grams
- Cherry tomatoes - 250 grams, halved
- Fresh basil leaves - 20 grams, chopped
- Vegan mozzarella (shredded) - 100 grams
- Olive oil - 2 tablespoons
- Balsamic vinegar - 1 tablespoon
- Garlic - 2 cloves, minced
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
Steps
- Boil a pot of salted water, then add the pasta and cook according to package instructions until al dente, about 10-12 minutes.
- While the pasta is cooking, heat the olive oil in a large skillet over medium heat and add the minced garlic. Sauté for 1-2 minutes until fragrant.
- Add the halved cherry tomatoes to the skillet and cook for about 5 minutes until they start to soften.
- Once the pasta is cooked, reserve a cup of pasta water and drain the rest. Add the pasta to the skillet with the tomatoes.
- Stir in the chopped basil, vegan mozzarella, balsamic vinegar, salt, and pepper. If needed, add a splash of reserved pasta water to create a creamy sauce.
- Toss everything together and cook for an additional 2-3 minutes until the cheese has slightly melted and everything is well combined.
- Serve immediately, garnished with extra basil if desired.
