Ingredients

  • Pasta (fusilli or penne) - 200 grams
  • Cherry tomatoes - 250 grams, halved
  • Fresh basil leaves - 20 grams, chopped
  • Vegan mozzarella (shredded) - 100 grams
  • Olive oil - 2 tablespoons
  • Balsamic vinegar - 1 tablespoon
  • Garlic - 2 cloves, minced
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon

Steps

  1. Boil a pot of salted water, then add the pasta and cook according to package instructions until al dente, about 10-12 minutes.
  2. While the pasta is cooking, heat the olive oil in a large skillet over medium heat and add the minced garlic. Sauté for 1-2 minutes until fragrant.
  3. Add the halved cherry tomatoes to the skillet and cook for about 5 minutes until they start to soften.
  4. Once the pasta is cooked, reserve a cup of pasta water and drain the rest. Add the pasta to the skillet with the tomatoes.
  5. Stir in the chopped basil, vegan mozzarella, balsamic vinegar, salt, and pepper. If needed, add a splash of reserved pasta water to create a creamy sauce.
  6. Toss everything together and cook for an additional 2-3 minutes until the cheese has slightly melted and everything is well combined.
  7. Serve immediately, garnished with extra basil if desired.
