Ingredients

  • Romaine lettuce - 150 grams
  • Cherry tomatoes - 100 grams
  • Cucumber - 50 grams
  • Cashews - 50 grams
  • Nutritional yeast - 2 tablespoons
  • Garlic powder - 1 teaspoon
  • Lemon juice - 2 tablespoons
  • Dijon mustard - 1 teaspoon
  • Olive oil - 2 tablespoons
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Whole grain bread - 2 slices
  • Balsamic vinegar - 1 tablespoon

Steps

  1. Preheat the oven to 180°C (350°F).
  2. In a blender, combine cashews, nutritional yeast, garlic powder, lemon juice, Dijon mustard, olive oil, salt, and black pepper. Blend until smooth, adding a little water if necessary to reach a creamy consistency.
  3. Tear the romaine lettuce into bite-sized pieces and place it in a large bowl.
  4. Slice the cherry tomatoes in half and the cucumber into small chunks, then add them to the bowl with the lettuce.
  5. For the croutons, cut the whole grain bread into cubes and toss them in a bowl with a drizzle of olive oil and balsamic vinegar. Spread them on a baking sheet and bake for about 10 minutes or until golden and crispy, stirring halfway through.
  6. Once the croutons are ready, add them to the salad bowl.
