- Romaine lettuce - 150 grams
- Cherry tomatoes - 100 grams
- Cucumber - 50 grams
- Cashews - 50 grams
- Nutritional yeast - 2 tablespoons
- Garlic powder - 1 teaspoon
- Lemon juice - 2 tablespoons
- Dijon mustard - 1 teaspoon
- Olive oil - 2 tablespoons
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Whole grain bread - 2 slices
- Balsamic vinegar - 1 tablespoon
Steps
- Preheat the oven to 180°C (350°F).
- In a blender, combine cashews, nutritional yeast, garlic powder, lemon juice, Dijon mustard, olive oil, salt, and black pepper. Blend until smooth, adding a little water if necessary to reach a creamy consistency.
- Tear the romaine lettuce into bite-sized pieces and place it in a large bowl.
- Slice the cherry tomatoes in half and the cucumber into small chunks, then add them to the bowl with the lettuce.
