  • Green cabbage - 200 grams, chopped
  • Carrot - 1 medium, diced
  • Celery stalk - 1, diced
  • Red bell pepper - 1, diced
  • Garlic - 3 cloves, minced
  • Onion - 1 small, diced
  • Vegetable broth - 500 ml
  • Olive oil - 1 tablespoon
  • Dried thyme - 1 teaspoon
  • Bay leaf - 1
  • Salt - 1/2 teaspoon, to taste
  • Black pepper - 1/4 teaspoon, to taste
  • Lemon juice - 1 tablespoon
  • Fresh parsley - 2 tablespoons, chopped for garnish

Steps

  1. In a large pot, heat the olive oil over medium heat.
  2. Add the diced onion, carrot, and celery to the pot and sauté for about 5 minutes until softened.
  3. Stir in the minced garlic and cook for another 1 minute until fragrant.
  4. Add the chopped cabbage, diced red bell pepper, dried thyme, and bay leaf, stirring to combine.
