Ingredients

  • Green cabbage - 6 large leaves
  • Quinoa - 100 grams (1/2 cup)
  • Black beans - 120 grams (1/2 cup), cooked
  • Onion - 1 small, diced
  • Garlic - 2 cloves, minced
  • Tomato paste - 2 tablespoons
  • Vegetable broth - 240 ml (1 cup)
  • Olive oil - 1 tablespoon
  • Cumin - 1 teaspoon
  • Paprika - 1 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Fresh parsley - 2 tablespoons, chopped

Steps

  1. Bring a large pot of water to a boil. Carefully add the cabbage leaves and blanch for about 3 minutes until they are tender. Remove them from the water and let cool.
  2. In a medium saucepan, heat the olive oil over medium heat. Add the diced onion and sauté for about 4-5 minutes until soft, then add the minced garlic and cook for another minute.
  3. Add the quinoa to the saucepan, along with the vegetable broth, tomato paste, cumin, paprika, salt, and black pepper. Bring to a boil, then reduce to a simmer, cover, and cook for about 15 minutes until the quinoa is fluffy and the liquid is absorbed.
  4. Stir in the cooked black beans and chopped parsley into the quinoa mixture, mixing well to combine.
  5. Take a cabbage leaf and place about 2-3 tablespoons of the quinoa mixture at the base of the leaf. Fold in the sides and roll tightly to enclose the filling. Repeat with remaining leaves and filling.
  6. Preheat the oven to 180°C (350°F). Place the cabbage rolls seam side down in a baking dish. Pour a little vegetable broth or water over the rolls to keep them moist.
  7. Cover the dish with foil and bake for 20 minutes. Remove the foil and bake for an additional 10 minutes to slightly brown the tops.
  8. Serve warm, garnished with additional parsley if desired.
