Ingredients
- Green cabbage - 6 large leaves
- Quinoa - 100 grams (1/2 cup)
- Black beans - 120 grams (1/2 cup), cooked
- Onion - 1 small, diced
- Garlic - 2 cloves, minced
- Tomato paste - 2 tablespoons
- Vegetable broth - 240 ml (1 cup)
- Olive oil - 1 tablespoon
- Cumin - 1 teaspoon
- Paprika - 1 teaspoon
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Fresh parsley - 2 tablespoons, chopped
Steps
- Bring a large pot of water to a boil. Carefully add the cabbage leaves and blanch for about 3 minutes until they are tender. Remove them from the water and let cool.
- In a medium saucepan, heat the olive oil over medium heat. Add the diced onion and sauté for about 4-5 minutes until soft, then add the minced garlic and cook for another minute.
- Add the quinoa to the saucepan, along with the vegetable broth, tomato paste, cumin, paprika, salt, and black pepper. Bring to a boil, then reduce to a simmer, cover, and cook for about 15 minutes until the quinoa is fluffy and the liquid is absorbed.
- Stir in the cooked black beans and chopped parsley into the quinoa mixture, mixing well to combine.
- Take a cabbage leaf and place about 2-3 tablespoons of the quinoa mixture at the base of the leaf. Fold in the sides and roll tightly to enclose the filling. Repeat with remaining leaves and filling.
- Preheat the oven to 180°C (350°F). Place the cabbage rolls seam side down in a baking dish. Pour a little vegetable broth or water over the rolls to keep them moist.
- Cover the dish with foil and bake for 20 minutes. Remove the foil and bake for an additional 10 minutes to slightly brown the tops.
- Serve warm, garnished with additional parsley if desired.
