- nutritional yeast - 3 tablespoons
- lemon juice - 1 tablespoon
- vegetable broth - 100 milliliters
- salt - to taste
- black pepper - to taste
- spinach - 100 grams, fresh
Steps
- Preheat the oven to 200°C (400°F).
- Peel and cube the butternut squash into small pieces.
- Toss the cubed butternut squash with 1 tablespoon of olive oil, salt, and pepper, then spread it out on a baking sheet.
- Roast the butternut squash in the preheated oven for about 20 minutes, or until tender and slightly caramelized.

- Add the roasted butternut squash to the skillet along with the vegetable broth, nutritional yeast, and lemon juice. Stir to combine and cook for 2-3 minutes.
- Using a fork or potato masher, mash some of the butternut squash to create a creamy sauce, while leaving some pieces whole for texture.
