Ingredients

  • Cauliflower - 1 medium head (about 400g)
  • All-purpose flour - 1/2 cup (60g)
  • Cornstarch - 1/4 cup (30g)
  • Plant-based milk - 3/4 cup (180ml)
  • Garlic powder - 1 teaspoon
  • Onion powder - 1 teaspoon
  • Paprika - 1 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Buffalo sauce - 1/2 cup (120ml)
  • Vegan butter - 2 tablespoons (30g)
  • Vegan ranch dressing - 1/2 cup (120ml) for dipping

Steps

  1. Preheat your oven to 220°C (425°F) and line a baking sheet with parchment paper.
  2. Cut the cauliflower into bite-sized florets and set aside.
  3. In a large bowl, whisk together the all-purpose flour, cornstarch, plant-based milk, garlic powder, onion powder, paprika, salt, and black pepper until smooth.
  4. Dip each cauliflower floret into the batter, allowing excess to drip off, and place them on the prepared baking sheet.
  5. Bake the cauliflower in the preheated oven for 20-25 minutes, or until golden and crispy.
  6. While the cauliflower is baking, melt the vegan butter in a small saucepan over low heat and mix in the buffalo sauce until combined.
  7. Once the cauliflower is done baking, remove it from the oven and toss it in the buffalo sauce mixture until evenly coated.
  8. Return the coated cauliflower to the baking sheet and bake for an additional 10-15 minutes, until the wings are crispy.
  9. Serve warm with vegan ranch dressing for dipping.
